Ingredients
  

  • 300 g Zucchini
  • 120 g Onion
  • 120 g Cheddar Cheese
  • 150 g Plain flour
  • 2 tsp Baking Powder
  • 4 eggs
  • 50 g Olive Oil
  • 200 g Bacon Sliced (lardons) See optional notes above

Instructions
 

Thermomix Method

  • Preheat your oven to 170°C fan and line a baking tin with parchment paper to make this recipe.
  • Grate the zucchini, onion, and cheese. If you have a Thermomix Cutter®, use it on the thick grate mode icon for easy grating. Weigh the ingredients as you go to make it simpler.
  • Once you've grated your ingredients, set the grater bowl aside and move on to the next step. Weigh the plain flour and baking powder into the Thermomix bowl and combine for 3 seconds / speed 5.
  • Then, add the eggs and olive oil to the bowl and mix for 10 seconds / speed 5.
  • After that, add the grated ingredients that you set aside earlier back into the Thermomix bowl along with the bacon and set to mix for 10 seconds / reverse speed +4.
  • Next, pour the mixture from the Thermomix bowl into your prepared baking tin and bake in the oven for around 30 minutes.
  • Finally, serve the zucchini slice warm or cold with a side salad. Enjoy your delicious and eay to make zucchini slice!

Conventional Method

  • Preheat your oven to 170°C fan and line a baking tin with parchment paper to make this recipe.
  • Weigh your flour and bicarb into a large mixing bowl and mix well with a whisk to ensure your baking powder is evenly distributed.
  • Add the four eggs and the olive oil to the flour mix and whisk to combine.
  • Using a hand grater, grate the zucchini, onion and cheese into the same large bowl.
  • Chop the bacon into lardons (long strips) and stir through the batter.
  • Next, pour the mixture from the bowl into your prepared baking tin and bake in the oven for around 30 minutes.
  • Finally, serve the zucchini slice warm or cold with a side salad. Enjoy your delicious and easy-to-make zucchini slice!

Notes

For this recipe, I used a non-stick USA Biscotti Tin, which I love because of its brilliant non-stick coating. It’s not necessary to line the tin because of its excellent non-stick surface. The exact size of the pan is 30.5cm x 14cm x 5.1cm (12″ x 5¼” x 2″). If you’re interested in purchasing one, you can Search “USA Pan Biscotti Pan” and should be able to find one for around $40 AUD.
You may want to leave out any extra salt when using smoked salmon.

    This is the best zucchini slice I’ve ever made. It just works. Made it with cold smoked ocean trout and it was delicious.
