Weigh all the dry ingredients into the TM bowl and whisk on speed 6/3 seconds. Remove the dry mix into a bowl and set aside.
Weigh the 60 g butter into the TM bowl and melt at 60°c/2m/sp 2
Weigh the milk, vanilla and eggs to the TM bowl pop in the MC and whisk on speed 6/5 seconds
Add the flour mix back to the TM bowl and blend on speed 5/6 seconds then leave to rest while you heat your pan.
Make sure your pan is thoroughly warmed through before adding your butter and/oil. I spray a little olive oil onto the hot pan first then add a small knob of butter, wait for the butter to melt before pouring some pancake mix into the pan.
Cook the pancake until you see bubbles appear on the surface. Wait for the majority of bubbles to burst, and the surface loses its shine, then flip
Cook the other side until golden brown, remove to a plate and repeat the cooking process until you've used up all the batter.
