Whip up this quick and easy Tex-Mex mince recipe! Packed with bold spices, and a rich tomato sauce, it's perfect for tacos, nachos, or rice bowls. A family-friendly dinner that's as versatile as it is delicious!
Chop the onion and garlic by placing 100g onion (quartered) and 2 cloves of garlic into the Thermomix bowl.
Set for 3 seconds/speed 9.
Scrape down the sides of the bowl.
Sauté the onion and garlic by adding 20g of olive oil to the Thermomix bowl.
Set to 5 minutes/100°C/speed 2.
While this is cooking, prepare the mince by placing the 500g of beef mince into the steaming basket. Break up the mince so it steams evenly without forming large chunks.
Add seasoning and main ingredients: After the 5 minutes of sautéing, weigh in 30g of Bec's Taco blend (or any taco blend you like), ½ tsp of chilli flakes (optional), the 400g can of whole tomatoes, 1 beef continental stock pot, and 100g of cream into the Thermomix bowl.
Next step chop the tomatoes, put the lid on, place the steaming basket inside the Thermomix bowl (no need to remove it), then chop the tomatoes for 3 seconds/speed 4. This helps break down the tomatoes for a smoother sauce.
Now start steaming the mince while cooking the sauce. Set the Thermomix to cook for 20 minutes/120°C/speed 2, with the measuring cup (MC) in place.
Bring it together: When the cooking time is up, carefully remove the steaming basket using the Thermomix spatula. Transfer the cooked beef mince into a Thermoserver or a similar heatproof bowl.
Add the corn and spinach to the Thermoserver, followed by the meat sauce from the Thermomix jug.
Pop the lid on and let the spinach wilt for a few minutes. Give everything a quick stir to combine.
Serve: Spoon the Tex Mex Mince into mini wraps, sprinkle with grated cheese, and warm through in an oven or air fryer. enjoy!
