These are reminiscent of doughnuts because of the yummy coating on the outside, although I couldn't bring myself to call them that because they're not really doughnuts, as they have no yeast.
While your TM bowl is clean, mix 50g of caster sugar and 1/2 tsp of cinnamon for 4 seconds/speed 6, then remove and set aside on a flat dish for dredging later.
Thermomix method: Making the batter
Add 200g plain flour, 15g baking powder, a pinch of salt, 50g caster sugar, and 1/2 tsp ground cinnamon to the Thermomix bowl. MC in Mix 5 seconds/speed 8.
At this stage, I removed the mix from the bowl and grated my apple using the Thermomix Cutter attachment, which I grated on the chunky setting. If you don't have a Thermomix Cutter, use the equipment you have to grate your apple. Although chunky rather than super fine, it is nice.
With the dry mix back in the TM bowl weigh in 100ml apple juice, 1 tsp vanilla extract, and 2 eggs. Mix 6 seconds/speed 2 or until just combined. Do not overmix.
Add the coarsely grated apples to the TM bowl. Mix again for 4 seconds/reverse speed 5 until just incorporated.
Prepare the Air Fryer or Oven:
Air fryer: Line the base of the air fryer basket with baking paper. Spoon the batter onto the baking paper. Depending on the size of your basket, you may fit 3 or 4 bakes at a time. Do not overcrowd them, as they will expand while cooking. Spray with oil. Bake in the air fryer at 200°C for 5 minutes. Repeat with the remaining batter. *See notes
Oven: I used a patty pan that I generously brushed with melted butter before adding the mix, then cooked for 11 minutes at 180°C fan. I didn't bother with the oil in the oven, as I did with the air fryer. I preferred the look of these but they tasted the same.
While they're cooking, melt your butter and prepare your cinnamon sugar for dredging. Remove the puffs from the air fryer, brush with melted butter, and sprinkle or dip each one in the cinnamon sugar, turning to coat.
Serve the apple cinnamon bakes immediately. You could make vanilla custard for dessert.
Conventional Method:

In a separate jug, whisk together 125ml apple juice, 1 tsp vanilla extract, and 2 eggs until well combined.
Create a well in the centre of the dry ingredients. Pour the egg mixture into the well. Stir gently until just combined. Be careful not to overmix.
Fold in the coarsely grated Pink Lady apples until evenly distributed throughout the batter.

All ovens and air fryers are different. You may need to adjust the temperature and time with your air fryer. You're looking for the outside to be golden brown and the inside cooked through. I wrapped the bottom of my tray in the air fryer with a baking sheet so it didn't fly around while cooking.For the oven method, you really need to coat them well in butter. If you don't have an excellent nonstick tray, I would also consider dusting the buttered tray with flour to help release them.
