Nougat Summer Roll in the Thermomix

Is there anything more nostalgic than biting into a chewy, chocolatey Summer Roll on a warm afternoon? You know the one—soft nougat centre, rolled in coconut and wrapped in a luscious layer of chocolate. What if I told you that you can whip up this treat at home in your Thermomix, with a fraction of the effort and loads of flavour? If you’re ready to relive your favourite childhood moments (or introduce your own kids to this Aussie classic), keep reading for the easiest, tastiest Nougat Summer Roll you’ll ever make!

A Summer Roll may mean something very different depending on where you are in the world or where you grew up. In Australia and New Zealand, it means the chewy nougat confectionery roll available from a milk bar or supermarket. It was very popular in the 1970s and remains available today. Cadbury makes it, but we know it under the brand name “Europe”. Do you remember them now?

We originally created this recipe at Bake Club, after the lovely Gaye brought it along to share. I’m not sure where she got it from, but it really does taste like a summer roll. We made this one with milk chocolate, but you might also try it with dark. Sometimes, I like to go to the dark side… 😉
Substitutions explained:
- Roasted peanuts: Traditional for a classic Summer Roll, but feel free to use roasted almonds or cashews for a different flavour.
- Glucose/honey: These are essential for that signature chewy nougat texture. If avoiding honey, use rice malt syrup.
- Dark chocolate: Swap for milk chocolate if you prefer a sweeter treat, but dark chocolate balances the nougat nicely.
Frequently Asked Questions
Can I make this gluten-free?
This recipe does have oats, so you’ll have to visit your local health food store to see if they have some GF certified! I don’t think I’ve ever seen GF oats at the supermarket. Then ensure your chocolate and glucose syrup are GF certified.
Can I freeze Summer Roll?
Absolutely. Slice, wrap individually and freeze for up to 2 months. Thaw at room temperature for 10–15 minutes before serving. Gosh, or eat them straight from the freezer. 😄
Can I use other nuts?
Yes, swap peanuts for roasted almonds, cashews, or even hazelnuts for a gourmet twist.
Do I need a Thermomix?
Thermomix makes the whole process quick and hands-free.
Can I reduce the sugar?
Try swapping some of the honey for rice malt syrup, but be aware it may affect the classic chewy texture.

Ingredients
Nougat
- 200 g milk chocolate melts
- 200 g peanut butter
- 180 g honey
- 190 g oats
- 60 g shredded coconut
- 80 g walnuts crumbled
- 2 tsp vanilla
Topping
- 200 g milk chocolate melts
- 20 g coconut oil
- Coconut to sprinkle on top
Instructions
Method for the base (nougat)
- Line a slice tin with baking paper.
- Place chocolate into TM bowl and grate 10 sec / speed 9.
- Scrape down and melt 4 mins / 50°C / speed 1.
- Add peanut butter and honey and melt 2 mins / 90°C / speed 1.
- Add oats, coconut, walnuts and vanilla and mix 30 sec / speed 4 / Reverse.
- Scrape mixture into prepared slice tin.
- No need to wash TM bowl.
Method for the topping
- Place chocolate and oil into TM bowl and grate 10 sec / speed 9. Scrape down and melt 5 mins / 50°C / speed 1.
- Pour melted chocolate on top of nougat in slice tin and sprinkle with coconut. Allow it to set in fridge for an hour.
- When set, cut into bars and enjoy!
- To clean Thermomix bowl:
- Pour a glass of milk into TM bowl and mix 5 sec / speed 8.
- Heat milk 5 mins / 80°C / speed 4.
- Enjoy warm chocolate milk. No wasted chocolate!
Update (Feb 2019)
Giving credit where credit is due. I think this recipe may have originally come from Thermofun. I did look everywhere on Google to give the author credit but couldn’t find anything under summer roll. What I learned was that what we (in Australia) call Vietnamese rolls are called summer rolls in other countries. Well, that’s a bit confusing. We eventually found a reference; it’s under Honey Nougat Log, so if it was you who made it, Thermofun, great job! We all loved it at Bake Club. 😉

Pecans would be my first choice as they’re a similar texture, then maybe toasted cashews, then harder nuts like almonds. You could try anything really. Hope that helps.
Hey Bec, just checking it’s normal oats, oat oats, like anzac biscuit oats? I only have golden syrup…what do you think about me using that instead of honey…same amount?
Hey there, Yep, rolled oats, not instant oats. You could use golden syrup, but the flavour won’t be the same. The taste of honey is also a litter sweeter. I would use the same amount.
Great, I’ll give it a whirl with golden syrup – couldn’t hurt as we prefer “less sweet” . Just busted open some malteesers so once they are gobbled, I’ll make the summer roll.
