Summer Roll

A Summer Roll may mean something very different depending on where you are in the world or where you grew up. In Australia and New Zealand, it means the chewy nougat confectionery roll available from a milkbar or supermarket. It was very popular back in the 70’s, and is still available today.
We originally made this recipe at Bake Club, after the lovely Gaye brought the recipe along to share. I’m not sure where she got it from, but it really does taste like a summer roll. We made this one with milk chocolate, but you might also try it with dark. Sometimes I like to go to the dark side… 😉

- Thermomix
Ingredients
Nougat
- 200 g milk chocolate melts
- 200 g peanut butter
- 180 g honey
- 190 g oats
- 60 g shredded coconut
- 80 g walnuts crumbled
- 2 tsp vanilla
Topping
- 200 g milk chocolate melts
- 20 g coconut oil
- Coconut to sprinkle on top
Instructions
Method for the base (nougat)
- Line a slice tin with baking paper.
- Place chocolate into TM bowl and grate 10 sec / speed 9.
- Scrape down and melt 4 mins / 50°C / speed 1.
- Add peanut butter and honey and melt 2 mins / 90°C / speed 1.
- Add oats, coconut, walnuts and vanilla and mix 30 sec / speed 4 / Reverse.
- Scrape mixture into prepared slice tin.
- No need to wash TM bowl.
Method for the topping
- Place chocolate and oil into TM bowl and grate 10 sec / speed 9. Scrape down and melt 5 mins / 50°C / speed 1.
- Pour melted chocolate on top of nougat in slice tin and sprinkle with coconut. Allow it to set in fridge for an hour.
- When set, cut into bars and enjoy!
- To clean Thermomix bowl:
- Pour a glass of milk into TM bowl and mix 5 sec / speed 8.
- Heat milk 5 mins / 80°C / speed 4.
- Enjoy warm chocolate milk. No wasted chocolate!
Update (Feb 2019)
Giving credit where credit is due. I think this recipe may have originally come from Thermofun. I did look everywhere on Google to give the author credit but couldn’t find anything under summer roll. What I did learn was that what we (in Australia) call Vietnamese rolls are called Summer rolls in other countries. We eventually found a reference, its under Honey Nougat Log. So if it was you that made it Thermofun, great job! We all loved it at Bake Club. 😉
