More Veggies & Fibre

  • Do you need to hide vegetables or want to add more vegetables to your evening meal? How about bulking out the mince with extra veggies like red capsicum, zucchini, mushrooms, or even a handful of baby spinach for colour and nutrition?

Homemade Nachos are so quick and easy to make in your Thermomix. You get to control the ingredients, so it can be a healthy alternative dinner in 20 minutes.

Equipment

  • 1 Thermomix TM6 (or later)
  • 1 Air Fryer

Ingredients
  

  • 20 g extra virgin olive oil or your preferred oil
  • 250 g beef mince use chicken or turkey mince for a lighter option
  • 2 cloves garlic crushed (or 1 tsp garlic paste)
  • 120 g chopped tomatoes fresh or tinned
  • 15 g taco seasoning blend store-bought or homemade
  • ½ tsp sugar (optional)
  • Pinch of salt (optional)
  • 6 wraps (I used mini) any variety-wholemeal, gluten-free, or corn wraps all work
  • ½ cup corn kernels fresh, tinned, or frozen
  • Optional: peas or chopped capsicum for extra veg
  • 1/2 cup grated cheese (or more 😁) cheddar, tasty, or your favourite melting cheese
  • A handful of mixed greens lettuce, baby spinach, rocket
  • 1 –2 tomatoes chopped (for serving)

Instructions
 

  • Find the “Browned Beef Mince” recipe on Cookidoo, or fry the meat in the frypan with olive oil. We won't follow the full Cookidoo recipe but use it to attain high heat. https://cookidoo.com.au/recipes/recipe/en-AU/r910621
  • Add 20g olive oil and 250g mince to your Thermomix bowl. (Same as instructed on Cookidoo)
  • Place the splatter guard on top and start. The Thermomix will set the time and heat (This will take 6 – 7 minutes on high heat). While this is cooking you can prep the nachos in step 6.
  • When the timer finishes, leave the meat in the bowl. This is where we are going off script. Add garlic, tomatoes, taco seasoning, sugar, and salt.
  • You can continue with the Cookidoo recipe or use the back button to repeat the last step. Either way, the Thermomix will let you reach high heat again, cooking for another 6 – 7 minutes.
  • Prep the Nacho Chips (while mince cooks)
  • Brush wraps lightly with oil, cut into quarters or strips.
  • Air fry at 180°C for 3–5 minutes until golden and crisp, or toast them in a frypan. Watch them, they can burn easily.
  • Arrange the cut toasted wraps on a baking tray with corn, peas, or capsicum all of the above. You can choose here.
  • Assemble: By this time, the mince should have finished cooking for the second time. Spoon the cooked mince over the nacho chips, then sprinkle generously with cheese.
  • Air fry or grill for a few minutes until cheese is melted and bubbly.
  • Wash and chop greens and tomatoes.
  • Serve nachos topped with fresh salad leaves. I like to add a touch of sour cream or sriracha and sour cream. YUM

    1. Hi Anne, you can toast the wraps any way you like. In the post I suggest you can do them one at a time in a frypan, but you can do them on a BBQ or in your oven. Whatever works for toasting. 😉
