This Middle Eastern BBQ Lamb Salad with Roast Pumpkin, Feta and Figs is the kind of weeknight wonder that feels special yet takes barely any time. - Spice: Cumin seeds echo Middle Eastern flavours; add a pinch of coriander, baharat or harissa to the veg for a bolder profile if you like. It’s your kitchen. 😁

Ingredients
- 1-2 lamb steaks leg, rump or backstrap, lightly oiled and salted
- 300 g sweet potato or butternut pumpkin peeled and cut into 2 cm pieces
- 2 Tbsp olive oil divided, plus extra for grilling
- 1/2 tsp cumin seeds
- 125 g can four-bean mix drained and rinsed (or chickpeas)
- 3 dried figs finely sliced or chopped (or other dried fruit)
- 1/4 small red onion very thinly sliced
- 80 g feta Soft homemade or Dutch feta is lovely
- 4 baby tomatoes halved
- 1 large handful mixed salad leaves
Dressing
- 1 Tbsp lemon zest and juice (or vinegar of choice)
- 3 Tbsp Extra virgin olive oil 3:1 oil-to-acid ratio (start with 3 Tbsp oil, 1 Tbsp lemon)
- 1/2 tsp mustard.
- pinch Salt to season
Optional extras
- 1 Avocado sliced
- 1 Other dried fruit cranberries, barberries, raisins
Instructions
- Roast or air fry veg: Toss pumpkin/sweet potato with 1 Tbsp olive oil and cumin seeds; air fry for 15 minutes at 180°C, or roast for 20–25 minutes at 200°C, until golden and tender.
- Prep lamb: Remove steaks from the fridge, rub with a little oil and salt; preheat BBQ or a heavy pan to medium-high for a good sear.
- Grill lamb: Cook 3–4 minutes per side for medium (or to taste), then rest on a warm plate for 3–5 minutes before slicing to keep it juicy.
- Make dressing: In a jar, or your Thermomix/blender, combine lemon zest and juice (or vinegar) with 3 parts oil to 1 part lemon, season with salt, then shake until slightly thickened.
- Build the salad: Lay a bed of salad leaves; in a bowl, combine warm roasted veg, beans, sliced figs, tomatoes, and red onion, then spoon over the greens.
- Finish and serve: Slice the lamb and arrange on top, crumble over the feta, add avocado if using, then drizzle with dressing just before serving.
