Ice Cream without Eggs

Churning Tips (for a fridge churner or Ninja)
I received a Ninja creamy for Christmas last year so I made the recipe below with the Ninja in mind. If you make the recipe below, it will fill four cups up to the maximum line. If you don’t want that much, halve the recipe.

If you own a Ninja Creami
When ready to churn in your Ninja, take one tub at a time and add it to the microwave and zap for 30 seconds before churning. This prevents the need for remixing and ensures perfect quenelles. Or you could leave it on the bench for 20 – 30 minutes before blitzing, but who has time for that when you’ve decided to have ice cream? 🤣🤣🤣
If you own a refrigerated ice cream churner
You’ll have to allow your mix to cool first, then follow the manufacturer’s instructions on churning. With my Breville Ice Cream Churner, I add 1 litre to the mix at a time, set it to churn, then, once It’s done, remove it to an ice cream tub like this one. Unlike the Ninja, creamy churning in an ice cream machine will mean you can still scoop it out the next day, and it won’t be set solid.

Using your Thermomix to churn the ice cream:
While a dedicated refrigerated churner, or the Ninja Creami, do a great job at producing that lovely creamy texture that we want, it is possible to produce similar results with just your Thermomix
Pour the mix into a shallow silicone or flexible Tupperware container and freeze. After freezing, you’ll want to cut through the frozen disc of mix into small cubes so you can blitz them in your Thermomix to turn them into cream ice cream. Ice cream flavour ideas
Get creative with your ice cream base! Here are some delicious ideas to try:
- Chocolate Delight: Add 2-3 tablespoons of cocoa powder to the base mixture. For best results, use Dutched Cocoa.
- Berry Bliss: Swirl in 1 cup of your favourite berry puree after churning, or think jam!
- Caramel Crunch: Drizzle in 1/4 cup of caramel sauce and add crushed toffee bits. Have you ever made butterscotch sauce? It’s a doddle in the Thermomix. Use the sauce from this recipe.
- Mint Chocolate Chip: Add one teaspoon of peppermint extract and fold in dark chocolate chips.
- Tropical Paradise: Mix in 1/2 cup of pureed mango and shredded coconut.

- 1040 grams cream
- 520 grams whole milk
- 170 grams sugar
- 65 grams cornflour
- Pinch of salt
- Vanilla 15g optional see notes

Thermomix recipe:
- Weigh all the ingredients on the ingredient list into your TM bowl.
- Mix 5 sec/speed 6
- Move to your Modes screen and choose Thicken 100°c start
- Pour into moulds, allow to cool, refrigerate, then freeze.
- When you want to churn this in your ninja, I find popping the tub in the microwave for 30 seconds first will prevent you from having to do a remix, and it will quenelle perfectly.
