Gourmet Deviled Eggs

Deviled eggs are also known as stuffed eggs, Russian eggs, or dressed eggs in different parts of the world. The basic concept involves a hard-boiled egg that’s shelled, cut in half, and filled with a mixture made from egg yolks as a base. This base of egg yolk is mashed or pureed and other ingredients such as mayonnaise, mustard, and spices are added to give them flavour.

The term “deviled,” in culinary contexts, dates back to the 18th century and originally referred to spicy or zesty food, including eggs prepared with mustard, pepper, or other ingredients that give them a bit of a kick. However, in regions or settings where the term “deviled” might be avoided for cultural or linguistic reasons, alternative names are often used.

Hard boiling eggs in your Thermomix:

  1. Start with 1 litre of water in your TM bowl. Gently place 2 to 6 eggs in the base of the bowl between the blades. Find “Egg Boiler” on your Mode screen and choose “Hard”. Anything less than Hard will make it more difficult to peel the shell off. If you have fresh eggs you can start with boiling water first. Either boil the jug and add a litre of boiling water or set your TM6 to Kettle Mode to 100°C and carefully pop your eggs into the boiling water before you set Egg Boiler Mode.
  2. While the eggs are cooking get ready with some iced water in a bowl with cold water. The eggs need to be shocked straight after cooking so the shell peels off easily.
  3. Sit them in the chilled water and allow them to cool. Then peel them unfder running water, or just keep dipping them in the bowl of iced water rather than running the tap and wasting water.
  4. Pop them in the fridge to chill after you’ve removed the shell so that they slice in half without damage.

While this method is highly effective, it’s worth noting that the freshness of the eggs can also impact how easily they peel. Very fresh eggs are often more difficult to peel than those that are a bit older because the pH of the egg whites in fresh eggs is lower, which causes them to adhere more strongly to the shell. So allowing eggs to age for a week or two before boiling, can make them easier to peel.

Devilled (or deviled) eggs are great as party food. They can be garnished with a variety of deliucious titbits (think smoked salmon, bacon bit, micro greens) to provide an eye catching and delicious tray of Hors d'oeuvres.

  • 1 Thermomix


  • 6 hard boiled eggs peeled and halved
  • 60 g mayonnaise home made or good quality shop bought
  • 1 pinch of salt
  • 1 big pinch of freshly ground black pepper
  • 1/2 tsp Dijon mustard or other mustard you like
  • 1/8 tsp garlic powder or onion powder
  • 1 tbsp of extra virgin olive oil

Garnish Ideas

  • Paprika
  • Finely chopped chives.
  • Bacon bits chopped and fried off until browned.
  • Dill pickles finely chopped
  • Shredded Cheese
  • Sliced Olives
  • Chilli Flakes
  • Smoked Salmon
  • Caviar or Roe
  • Avocado chopped into small cubes
  • Toasted Sesame Seeds
  • Microgreens
  • Finely chopped soft herbs Dill fennel fronds, basil etc. See notes.
  • I could go on but you get the picture


  • Hard boil your eggs. If you own a Thermomix you can use the basket to steam your eggs or of course, with the TM6 you can use "Egg Boiler Mode" I used Egg Boiler mode and chose "Hard".
  • Once the eggs are cooked you must put them in ice water immediately, this helps later when you go to remove the shell.
  • Slice peeled eggs in half lengthwise (use a thin sharp knife) and place them on a serving platter. Remove yolks with a spoon and place them in a medium mixing bowl.
  • Add the yolks to the TM bowl along with the mayo, mustard, salt, black pepper, garlic (or onion) powder and olive oil and mix until creamy.
  • Pipe this back onto the egg white then add your favourite garnish.

Some fresh herbs bruise very easily like basil. I tend to use basil microgreens or cut and serve leaves immediately.
I prefer to leave my blended egg yolk mix fairly plain and use a garnish to add extra flavour. Have you ever tried to pipe a mix with lumps in it? You can thank me later. x
Devilled eggs can be made in advance. Store in a sealed container in the fridge for up to 2 days.


  1. I must be retro as I have always made deviled eggs. There are only three of us and I have to do at least six eggs to ensure I get some. We love them. I have never boiled the eggs in the thermomix, I will have to try.
