Easy Oven Fried Chicken

Fried chicken can be such a messy job, all the way from the start to the cleanup.  But I think this quick, easy oven fried chicken will change your mind, and I’m sure it will be on the menu at your place, as regularly as it is at ours.

This is from one of my “Evening Meals” cooking class recipes.  I don’t post these recipes out as a rule because people pay to come to class, but I’m fairly confident that the ladies that frequent my classes won’t mind too much if we share this one. You still need to get a southern spice blend or use mine, but how I pull this together will amaze you.

Does the thought of the assembly line of flour, egg and crumbs turns you right off?  Well, let me explain this easy way. Shhh, don’t tell anyone. The easiest way to do this, is to have two bowls (or use the tray your chicken has come in as one)…

  • In the first bowl add the bread crumbs and the southern fried chicken blend. Mix them together
  • In the second bowl (or the tray your chicken came in) dollop in the mayonnaise. Mix the mayo and chicken together so it’s all coated, then dredge it through the crumb mix.
  • That’s it! Now place it on a tray or in a fry pan can bake or cook it. I like to use my Air Fryer these days. 20 mins on 180°C for thigh fillets and 30 mins at 180°C for drumsticks. More or less depending on the size of your chicken pieces.

You know, you can do so much with this simple recipe.  Change the panko crumbs to fresh, add finely chopped nuts or another spice blend, and you have something a little different to serve up.  Give it a try, and feel free to let us know what variations worked well for you.

Kids (and husbands) love fried foods. We know they are not so healthy, and if you're the cook, they're a bit messy to make. This recipe for oven fried chicken makes the job super easy and a lot more healthy.

  • 6 Chicken drumsticks or 500 g of chicken thigh fillets cut into portions
  • 2 tablespoons Mayo homemade or a good quality store-bought
  • 2 tsp of Bec's Southern Spice Blend or a supermarket packet blend
  • 80 – 90 g of Panko Bread Crumbs or fresh bread crumbs


  • Pop the oven on to 180°c
  • Place a non-stick cooling rack on top of a baking tray (you can line the baking tray with baking paper if you don’t want to have to spend to long on clean up)
  • Place the chicken into a bowl then add the mayo. Smear the mayo liberally over the chicken
  • In another bowl add the bread crumbs and spice blend mix well to combine
  • One at a time press the breadcrumb mix onto the chicken to coat all over.
  • Place each crumbed piece of chicken onto the cooling rack and when they’re all coated pop in the oven. For drumsticks, they’ll take around 40 mins but it depends on how cold they are, how hot your oven runs and how big your drumsticks are. Check at 30 mins and give them longer if the juices don’t run clear.


Of course, if you have an airfryer you can cook them off in there.  I have a little benchtop smart oven from Breville which I cook mine in because my airfryer was full of chips.
