I love making chicken burgers for my family because they are always a hit. Oh yes, my family are burger fanatics, and if you’re nodding along, I bet these chicken burgers will make you popular.

As a chef, I like to make my own burger buns (but of course, you can buy them) Then, while they’re turning all golden and delicious in the oven, I tackle the star of the show: the crumbed chicken. This is such a quick and easy recipe, and you can adapt it to please your own taste buds.

4 components for our chicken burger

  1. Burger buns: Either use shop bought or make these home made Burger Buns.
  2. Chicken: I prefer thigh fillets; they’re juicier and much more forgiving if you slightly overcook.
  3. Crumb mix: Use a shop bought one, or use our Savoury Crumb Mix.
  4. Mayonnaise: Use a shop bought one, or even better use our Homemade (thick) Mayonnaise.

My secret ingredient for a juicy chicken burger?

The crumbed chicken part is easy-peasy. It’s one of those foolproof recipes that’s both quick to whip up and a crowd-pleaser. And here’s where it gets interesting, or do you think weird? 🙃🤪 My crumbing secret weapon is mayo! I see those raised eyebrows 😲, but hear me out. It’s less messy than the traditional way, plus it makes the crumbing process a breeze. The mayonnaise helps to keep the chicken moist and flavorful, and it also helps the breadcrumbs to stick to the chicken.

Here’s how to make the chicken burgers

  1. Start by making your own mayonnaise, or use a good-quality store-bought mayonnaise.
  2. To prepare, mix your preferred seasonings with panko breadcrumbs in a separate bowl. A simple blend of garlic powder, onion powder, paprika, and salt works well. The amount of each seasoning is up to your preference, but I’ve added a mild recipe below, you know, one the kids will like. You can adjust the seasoning to add more flavour. I personally enjoy using my Southern spice blend, which you can find in my spice blend eBook.
  3. Panko Smanko, some are good, others are not. I really like the taste and texture of the Obento brand. Use what you like, though. I’ve used sourdough crumbs before because sometime we have too much bread!
  4. Smother each chicken thigh in the mayonnaise, then coat it in the breadcrumb mixture.
  5. Now cook them off. You can do it like me and stick them in your air fryer at 180°C for 15 minutes. If you don’t have an air fryer heat a frying pan over medium heat. Add some oil, then cook the chicken thighs for around 5-6 minutes per side or until they are cooked through.
  6. Serve on your favourite burger buns with your favourite toppings.

Here are some tips for making the best chicken burgers:

  • Use boneless, skinless chicken thighs; you can use breasts, but thighs are much more forgiving and juicier.
  • Thighs are usually fairly even in thickness, but if you you’re using breasts, you’ll need to pound them flatter so they’ll cook evenly more evenly. You know that the fatter bit needs to be as thin as the thin bit. 😂
  • Don’t overcook the chicken. The internal temperature should reach 75°C (165°F); however, you have less chance of drying out thigh fillets than chicken breasts. That’s what I love about them.
  • Serve the burgers on toasted buns with your favourite toppings.

Some variations on the recipe:

  • Add a slice of cheddar cheese to the chicken straight after cooking. In the air fryer, I like to wait till it’s cooked, place the cheese on top, and then close the door again (with the air fryer off) while I get everything ready. Don’t turn the air fryer on when you have a thin slice of cheese on top; you may find it flies off and sticks where you don’t want it to. 🥴😵😲
  • Top the burgers with your favourite sauce, you can use whatever you like, but I’ve got a few ideas for you here. Try my Big Mac Sauce, or My Tomato Sauce or Satay Sauce. They can all work well with this crumbed chicken, depending on what spices you’ve used.   • Serve the burgers with your favourite toppings, such as lettuce, tomato, onion, and pickles.
