You know, I have a spice blend eBook that I created a while back. I don’t know how this blend got missed out, but it’s in there now. I guess I was trying to balance my Spice books so that it didn’t have too many curries, so that I could share blends from other parts of the world. Does this make me an honoury spice girl?

Ingredients for Butter Chicken Spice Blend

This blend is a mix of aromatic spices that form the backbone of my Butter Chicken. Here’s why each spice is important:

  • Cloves: Add a warm, sweet, slightly bitter flavour that enhances the dish’s depth.
  • Cassia Bark: Cassia is similar to cinnamon but with a stronger, earthier note. It adds a warm, sweet, and slightly spicy flavour that deepens the complexity of the spice blend.
  • Ground Paprika: Brings a mild flavour and vibrant colour to the blend.
  • Ground Cardamom: Adds a sweet and floral note, balancing the sauce’s richness.
  • Ground Coriander: Provides a fresh, citrus-like flavour. Coriander and cumin are great balancing spices.
  • Ground Cumin: Adds a warm and earthy taste, essential for the overall flavour profile.
  • Ground Turmeric: Known for its bright yellow colour and slightly bitter, earthy taste.
  • Fennel Seeds: Contribute a sweet, licorice-like flavour.
  • Star Anise: Adds a sweet and aromatic touch.

´╗┐Making this spice blend ahead of time will reduce your effort in creating our fabulous "butter chicken" dish.

  • 1 Thermomix (optional)


  • 1/2 tsp cloves
  • 1 tsp ground cinnamon
  • 2 tsp ground paprika
  • 1 1/2 tsp ground cardamom
  • 2 tsp ground coriander
  • 2 tsp ground cumin
  • 2 tsp ground turmeric
  • 2 tsp fennel seeds
  • 3 star anise
  • 1/2 tsp nutmeg


  • Add all the spices to your Thermomix bowl or spice grinder
  • Grind for 30 seconds on speed 9.
  • Set aside the spice blend for later use.
  • This will make 2 – 3 batches of my butter chicken recipe depending on how much you want to use for each dish
