Brussels Sprouts with Peas & Bacon

A side dish or a main meal?
Add a few pieces of bread (sourdough is great, and toasting it is even better), and it’s a really easy (and surprisingly satisfying) evening meal. At least that’s what my hubby says, although he is easily swayed whenever I mention bacon. 😁
Substitutions:
- Swap bacon for pancetta or perhaps prosciutto for a twist.
- For a vegetarian version, skip the bacon and add a handful of toasted pine nuts or toasted slivered almonds at the end.
- If you don’t have parmesan, try pecorino or a sprinkle of soft cheese or even feta for a different flavour.
- Don’t like Brussels sprouts? You could swap out with cabbage.

Ingredients
- 100 g brown onion peeled and quartered
- 100 g streaky bacon 1-2 rashers cut into 2cm pieces (lardons)
- 20 g extra virgin olive oil
- 8 Brussels sprouts trimmed and sliced (8 large or 12 small)
- 125 g frozen peas
- Salt and freshly ground black pepper to taste
- Shaved parmesan to serve

Start the recipe here:
- Add 100g brown onion, peeled and quartered, to the mixing bowl.
- Chop 3 sec/speed 5
- Scrape down sides, add 100g streaky bacon, cut into 2cm pieces and 20g extra virgin olive oil
- Sauté 4 min/120°C/reverse/speed 1 (MC off, use basket on lid)
- Add 8 Brussels sprouts, trimmed and thinly sliced
- Sauté 3 min/100°C/reverse/speed 1 (MC off, use basket on lid).
- Add 1 cup (125g) frozen peas,Salt and freshly ground black pepper, to taste
- Cook 2 min/100°C/reverse/speed 1 (MC off, use basket on lid).
- Transfer to a serving bowl, top with plenty of shaved parmesan, and serve immediately.

I’m keen to make this tonight. I notice the recipe says to slice the sprouts thinly, but the picture looks like large ones are cut in half, small ones left whole. Would you clarify please…….. I’m hoping for the half/whole option 😂

Hi Janet, it depends on ths size of your sprouts. If they’re tiny you can cut them in half but larger ones slice. Start off by slicing them so get the idea. You can’t really go wrong if you slice them.

It depends on how far you cut off the stem section. Slice them with the stem in tact and you’ll be fine.
