Banana Oat and Chocolate Bars

Yeah, it’s a mouthful, and it’s filling too. If you have children (or husbands) that are always looking for something to snack on, then these banana oat and chocolate bars are brilliant. Not really a muesli bar, but they could replace a shop-bought one very easily, and they might just fall into the catgeory of healthy chocolate bar.

They’re great for using up bananas that are being overlooked (due to their very ripe state) in the fruit bowl. Throw in some oats to make them a bit more healthy and help fill them up, then chocolate chips to give them the yum factor.

You know what I always say. Use great chocolate, they’ll taste so much better for it. And make sure you use rolled oats, not the quick variety. This healthy chocolate bar is easy to make and will definitely fill them up until dinner time. Now, I know there are hundreds of banana oat bars out there, but this one has twist I think you’ll love! 🍌🍫

What ingredients do we use?

Before we dive into the recipe, let’s talk about the ingredients that makes this oat bar so yummy:

  1. Light Brown Sugar: Adds a depth of flavor with its molasses undertones. It’s like giving your taste buds a little hug!
  2. Caster Sugar: For that delicate sweetness but helps firm them up afte they’ve baked then cooled.
  3. Flaked Sea Salt: A little goes a long way to bring out the flavours. If you’re using table salt, halve the amount. Trust me, it matters.
  4. Sweet Warming Spice Mix: My personal blend adds a unique character, but feel free to use a mix of cinnamon and allspice if you’re in a pinch.
  5. Butter: Unsalted and cold—perfect for that moist, melt-in-your-mouth texture.
  6. Bananas: Adds natural sweetness and moisture, but not too much! Overdoing bananas could lead you into doughy disaster territory.
  7. Rolled Oats: For that hearty chew we all love. Make sure you get rolled oat quick oats will be wrong here.
  8. Semi-Sweet Chocolate Chips: Because chocolate makes everything better, right? Ok you can use milk chocolate or white if you have to. I like mine dark but not bitter.

Method Thermomix and Conventional

Equipment

  • 1 Thermomix or Stand Mixer

Ingredients
  

  • 90 g light brown sugar
  • 60 g caster sugar
  • 155 g plain flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon flaked sea salt or ¼ tsp of table salt
  • 1 teaspoon of my sweet warming spice or use ½ tsp cinnamon ½ tsp allspice
  • 60 g butter
  • 2 teaspoons vanilla extract
  • 1 large egg
  • 140 g bananas 2 smallish ones, but don’t add more or they’ll be doughy
  • 125 g rolled oats
  • 125 g semi-sweet chocolate chips
  • 70 g chocolate for drizzling over the top

Instructions
 

Thermomix method:

  • Preheat the oven to 160°C and line a slice tin. I used a USA biscotti tin, but any 30 x 14 or any tin that fills to the same volume will work.
  • Weigh the brown sugar, caster sugar, plain flour, baking soda, salt and spice into the TM bowl. Add the cold cubed butter on the top and mix for 5 seconds/speed 6. Scrape and lift.
  • Add the vanilla, egg and broken or chopped bananas to the TM bowl and mix for 5 seconds/speed 6 scrape and lift.
  • Weigh in the oats and chocolate then mix for 5 seconds/ reverse speed +4
  • Scrape the contents out into your prepared slice tin and bake at 160°C fan for around 25 mins, or until golden brown on the top.
  • Remove your slice from the oven and allow it to cool to room temp.
  • Melt your chocolate either by adding it to a clean TM bowl and set for 5 mins /50 c/speed 1 scraping down in between. Or using the microwave method I’ve listed in the conventional method. Place in a piping bag or use a spoon to drizzle over the slice when cool.

Conventional method:

  • Preheat the oven to 160°C and line a slice tin. I use this tin, but any 30 x 14 or any tin that fills to the same volume will work.
  • Cream the butter and sugars in a stand mixer
  • In the meantime in a separate bowl, mix the flour, baking soda, spices and salt whisk to combine.
  • Mash the banana, and add it the egg and vanilla to the creamed butter mixture and beat to combine.
  • Fold in the flour then the oats and chocolate chips.
  • Scrape the contents out into your prepared slice tin and bake at 160°C fan for around 25 mins, or until golden brown on the top.
  • Remove your slice from the oven and allow it to cool to room temp.
  • Melt your chocolate in a microwave using short bursts, stirring in between. Give it 30 seconds the first time then stir, then 10 seconds burst until melted. Be careful you don’t burn your chocolate, or it will become gritty. This will happen if you allow it to go over 50°C. Or of course, you could use a double boiler, (bain-marie) Place in a piping bag or use a spoon to drizzle over the slice when cool
