Polenta Cake with Pear and sultana syrup
200g unsalted butter softened
165g raw sugar
3 small granny smith apples
1tsp vanilla extract
1 small lemon, juiced and zest grated
120g instant polenta
1 tsp baking powder
100g of mixed dried muscatel or sultanas
100g of dried pear
150g castor sugar
125ml of marsala or similar
2 cinnamon quills
1 vanilla bean, split, seeds scraped
1 orange, zest peeled into wide strips
Method by hand
Grate apples and stew with 25g of the butter, and 1 tbs of the sugar in a saucepan. Cook, stirring continuously, over medium high heat for 10 mins or so till the liquid has evaporated. Set aside to cool.
Preheat oven to 180c. Grease a 18cm round cake pan, then line the base and sides with baking paper. Using an electric mixer, beat the remaining butter and sugar and a pinch of salt until light and fluffy. Add eggs , one at a time, beating until all is combined don’t split the mix. Add stewed apples vanilla, lemon juice and zest, polenta and baking powder and beat on low speed till well combined. Spoon the mix into your greased tin and bake for 35min till cooked through.
Place all ingredients with 125ml water in a saucepan over a high heat. Bring to a simmer, then cook till the liquid becomes a syrup. Cool.
Remove the Vanilla bean and cinnamon and spoon over the cake.
Quarter apples and put them in your TM bowl and set dial to closed lid position and pulse the Turbo button 2 or 3 times for 1 second each.
Add 1tbs of the sugar and 25g of butter and Cook for 10 minutes at 100˚C on Reverse + speed 1.
Remove from bowl and allow to cool. Rinse bowl and allow to cool.
Preheat oven to 180c. Grease a 18cm round cake pan, then line the base and sides with baking paper.
Insert the butterfly into the TM bowl, add sugar, butter and a pinch of salt. Mix 1 ½ mins/speed 2-3. Scrape sides of bowl, then mix further 30 secs/speed 3 until pale and smooth.
Add eggs one at a time and incorporate to the mix.
Remove the butterfly
Add stewed apples and remainder of the ingredients to the TM bowl and give it a gentle stir on speed 2-3 for 10 sec to incorporate ingredients.
Pour the mix into your greased tin and bake for 35min till cooked through.
In the meantime make the syrup.
Add all the ingredients into the TM Bowl with 50ml of water. Cook on speed 1 at 100c for 10 mins till the mix forms a syrup.
Once the cake is cooled pour the syrup on the cake and serve with a dollop of cream. This one’s worth the calories.
