In my opinion, there’s not much that’s more rewarding that offering guests an antipasto platter. Knowing you’ve made all the ingredients yourself including the Salami is a highlight.

Last weekend I made a batch of these delightful Cornflake Cookies. You’ll get around 20 large cookies or a lot more if you make little ones. Don’t forget if you make them small you can have 2 or 3 and not feel as guilty. hahaha.
I think you all know by now my mum didn’t like to cook much and I did most of the cooking when I was old enough to hold a frypan. My Nan was the cook in the family. She was brilliant; I wish I had taken more notice. I don’t ever remember her looking up a recipe; they were all in her head. By the time I was ten she lived in another state, so it was just too far for weekend visits. Nan never made these cookies that I can remember but mum would buy them from fete’s and the like as I was growing up. They are pretty yummy.
Bake Club testing
We’re going to have a play with them at Bake Club this term but I’ve got in and tested one of the recipes before we start. I’ll post the best Cornflake cookies if this one doesn’t win after we’ve tested the rest. Although they must be alright there were 21 in total. When they came out of the oven my grandson, and I had one each. Then I left them for our guests to munch on while I went to work in the cooking school. After class, I came back to see there were only 2 left. WOW, they must have been good, 16 cookies eaten by 3 adults in one sitting. Ahahahaa funny
This is one yummy topping for brownies or a myriad of other sweet treats. I call it Salted Caramel Coconut Topping, last “Open Day” (2016) I used this topping over my Brownie Recipe, and the crowd went wild. Actually, they didn’t, but I did get quite a few people telling me it was absolutely delicious. We made it in Bake Club this week, and I had a similar response so I thought I’d share it with you. I’m sure some of you will have made a recipe from a book, magazine or found one online and after working away at it found it didn’t quite work out how the picture looked.
I think It’s awful that this happens. It puts people off cooking or baking and makes them think they’ve done something wrong. I suppose that’s why there are so many recipe books etc. out there. We’re all searching for those truly amazing recipes that work.
Warning, rant coming up

This is a great slice recipe, the girls at Bake Club said they were going to make this a regular, and that’s saying something considering they get around 40 new recipes a term. Continue reading “Apple slice”
You must be wondering why you haven’t been seeing our usual photo’s on our Facebook pages for a while. Well, it’s because we’ve been doing things a little differently at Bake Club this term.
Because most of the girls have been coming for around 4 years, I’ve had the opportunity to notice techniques that cause them problems. So this term we dealt with them. Continue reading “A Bit More Than Bake Club”
This first term in my “Evening Meals ” classes I’ll be teaching my quick recipe and tips for making ricotta gnocchi. So making Homemade ricotta is of some interest because it’s so easy. They’re a bit different from the potato based ones but brilliant for a quick, tasty evening meal. Continue reading “Homemade Ricotta”
I was asked to pop this recipe up for my little Christmas Mince Tarts from one of my lovely students at last weekend’s Christmas gift giving class. It was the pastry she was really after because we made a filling in class, but without giving you some sort of filling, they’re not mince pies are they. 😉 Continue reading “Christmas Mince Tarts”
Wow, what a day.
Once again we had a huge turnout for our 2016 Open Day. Before I say anything, I need to say some big thank yous, firstly to my wonderful helpers on the day. Continue reading “Bec’s Table Open Day 2016”
Open Day at Bec’s Table 2016
Yes, it’s coming up again. I’m in full planning mode for this years “full on” event. Although it’s lots of work, we love open day. The support you show us on Open Day is heartfelt. Continue reading “Open Day At Bec’s Table”
Well, what happened at our first food swap?
Some of you have been asking about our food swap event, so here it is. It was brilliant.
Those involved not only shared their yummy treats but shared the recipes too. We all handed in a selection of items you’d pay around $5 for at a Farmers Market. How this worked was fun. I made up some monopoly type money (Bec’s Table Bucks) and gave a $5 Bec’s Buck for every item brought. Continue reading “What Happened At Our First Food Swap Event at Bec’s Table”
Last term in Bake Club, we made these Amazing Cakes. I thought I’d throw out a bit of a challenge, and the girls loved it. Phew. I’m so proud how these cakes turned out. Some were a huge challenge, but even after a bit of cussing, we all deemed them to be brilliant. Continue reading “Amazing Cakes from Bec’s Table Bake Club”
